This was… a week. I received some bad news this week, including the passing of my sweet neighbor. I knew she’d been sick but I didn’t know the end was so close. I loved living near her. She and her husband made me feel welcome as a first time homeowner. I’ll miss her terribly.
Now that we’re halfway through the work week, I must say that things are looking up. Here’s hoping that continues!
Recipe of the Week
Um, I forgot how insanely delicious this is….
Slow Cooker King Ranch Chicken
- 2 cups crushed tortilla chips, divided
- 2 lbs chicken
- 1 can cream of mushroom soup
- 1 can Rotel
- 1 green bell pepper sliced
- 1 cup diced yellow onion
- 2 cloves garlic, minced
- 2 teaspoons corn starch
- 1 teaspoon salt
- 1 teaspoon cumin
- 1 teaspoon chili powder
- ¼ teaspoon black pepper
- ¾ cup sharp cheddar cheese, divided
- Put 1 cup tortilla chips at the bottom of a sprayed slow cooker. Top with chicken.
- Mix all remaining ingredients except other half of the tortilla chips and the cheese. Spoon over the chicken. Top with part of the cheese, then the tortilla chips, then the rest of the cheese.
- Cook on low for around 3 ½ hours.

I sabered my first champagne and enjoyed a bit of bubbly. It was a nice change of pace from my seltzer, beer, seltzer, repeat.

Anyone else? I Am A Killer moves a little.. well, slow. But it’s interesting! Jim finds it to be a bit of a downer and it totally is. But it’s fascinating. Does that make me weird?

I’m just going to come out and say it. I don’t like watching tennis so I didn’t think I was going to like this. WELL, I was wrong. It’s good. Really good. I have a whole new appreciation for Andre Agassi.

This Week’s Adventures
We had our mid-week date night in Frederick and found a really cute bar.. Aaaand I can’t remember what it’s called. It’s on Market but farther down.. I’ll find out for you if you care.
FaceTime with Nuggie is always fun!
We headed to Harpers Ferry to go tubing down the Potomac with some friends and it was lovely.
After tubing, we hit up Harpers Ferry Brewing and Smoketown Brewing Company. I’ll also note that I got dinner from King’s Pizza which is right next to Smoketown and it was DIVINE. I’m very picky with spaghetti sauce and it was delish. Yum.
I started a Fitbit Workweek Hustle strong by walking to Great Falls with a friend. So pretty!
Current Hobbies
My neighbor whose wife passed away is a big fan of my cinnamon rolls so I was happy to make some for him. I used the Pioneer Women recipe and added chopped pecans. YUM.
We went to hit some golf balls and unfortunately the heavens opened up when we were about halfway through the bucket. Sad.
I took a little hiatus from my little clothes shopping fast (I KNOW) because I realized that I have almost zero wear-around-the-house tee shirts. I went to the Marshalls in Tysons during Virginia’s tax free weekend and scored four shirts (including a Free People tunic that still had the tag on it–$128 originally) for a GRAND TOTAL of $37.00. This little camo getup is one of my new favorites. Excuse the mirror selfie.
Other Things to Note:
Kamala Harris. SO many thoughts. Will refrain for now. Stay tuned.
I can’t even talk about the college football decision. I am SO SAD (and a Buckeyes and therefore Big Ten fan, so there’s that). If you know me IRL, you know that I schedule my autumn weekends around Bucks games. I love everything about college football. And fall. Sigh, I just love it. Is 2020 over yet?

This time next week, I’ll *hopefully* know when I’ll be getting the keys to my little lake condo. I’m still not letting myself get excited because of what happened last time (the seller was a dick and completely screwed me over) but we’re getting there!
