This is one of my faves. Enjoy!
Ingredients:
– 2 frozen pie crusts without sugar
– 6 eggs
– 2 cans evaporated milk
– 1/2 tsp salt
– 2 cups grated Swiss cheese
– 2 cups cooked spinach, drained
– 3 tsbp minced onion
Preheat the oven to 425*F. Sprinkle cheese at the bottom of the pie shells. Combine eggs, milk and salt in a bowl and mix throughly. Sauté the onion in butter or oil until lightly browned and add to the mixture along with the spinach. Pour the custard mixture in to the pie shells and bake at 425*F for 15 minutes; then lower the heat to 350*F and bake for 30 minutes more, or until the quiche is set.
