HAPPY NEW WEEK!!! There are only four weeks left until summer break, so every Monday is one step closer to that! I’m one happy girl.
I was just talking this weekend with some friends about how no one should ever really grow out of chicken fingers. They’re delicious, and you can do so much with them.
This little meal plan is great for someone who is trying to really cut costs, but doesn’t want the same old thing over and over again. I had a roommate once who would make soup or lasagna every Sunday and eat it for lunch ALL WEEK. While I appreciate the self-discipline, I don’t see myself having the same thing every day for a week.
Anywho, these babies are what I bought.. They’re around $8 from Trader Joe’s and are my absolute favorite.. They’re 110 calories a piece. One bag is enough for one person for well over a week.
1) Chicken, Cheese and Broccoli:
This one is pretty straight forward. Bake both the chicken fingers and the broccoli on the same cookie sheet at 400 until the broccoli is adequately roasted. Remove from the oven, sprinkle shredded cheddar cheese on the chicken, and viola! Soooo good.
2) Pizza chicken
Bake chicken until it’s almost done. Spread tomato sauce (I like Trader Joe’s Pizza Sauce) and sprinkle with mozzarella cheese. Add pepperoni if you’re feeling adventurous.
Bake the chicken. Chop up and add to: Cruciferous Crunch (my favorite TJ’s veggie), diced red onion, and shredded cheese. Top with Trader Joe’s Siracha Ranch.
This meal plan was the result of a self-inflicted “pantry challenge.” I hate when I go on spending binges and then have to make do with what I have in the fridge, but this week it was totally delicious!
